This very rare mutated yellow Pacamara from El Limoncillo has a beautiful spiced and citric profile. Those who enjoy herbal and complex coffees will find this limited batch delightful.

Farmlevel Story

 The Fincas Mierish group of Nicaragua has been growing coffee on El Limoncillo since the 1930s, and named the farm as a nod to its origins as a lemon orchard. In 2004, El Limoncillo discovered a mutation amongst their Pacamara – the normally red fruits were yellow, a mutation no one knew existed. The result makes for a spectacular flavor profile, a bit fruitier and more citric than the red variety.

Brewing Suggestions

My 1:15 ratio brew uses 4 pours to achieve a delicious and complex cup, with a TDS of 1.37. After dosing the dripper with 15g coffee and taring our scale, we pour in a spiral motion and bloom to 45g. At 0:30 seconds, pour to 90g. At 1 minute, pour to 157.5g. At 1:40, pour until the scale reaches 225g. We like to gently swirl the dripper after this final pour, to ensure a level coffee bed and even extraction.
